At The Oberoi Beach Resort, Bali, hospitality is not a performance—it is a philosophy shaped through intention, detail, and restraint. At the heart of its culinary identity stands Chef Natalino Ambra, a chef whose cuisine is guided by emotion, precision, and cultural harmony rather than excess.
In an exclusive conversation with Life N Style Magazine Bahrain, Chef Natalino opens up about craft, mentorship, sustainability, and the deeply personal stories that shape his table.
A Journey Forged by Discipline, Emotion, and Global Kitchens
Chef Natalino’s culinary path spans some of the world’s most demanding kitchens, from Armani Dubai to Osteria BBR by Alain Ducasse. It was under Ducasse’s corporate team that his philosophy became sharply defined.
“Perfection is not complexity—it’s clarity,” he reflects.
Those formative years instilled discipline, precision, and respect for ingredients—principles that continue to guide his leadership at The Oberoi today.
Signature on the Plate: Italy Meets Bali
Life N Style Magazine:
Your menus reflect Italian tradition infused with Balinese ingredients. Which dish best represents this fusion?
Chef Natalino Ambra: “My signature dish is Homemade Burrata Ravioli with Balinese Tomato Essence and Basil Oil. It’s a meeting of two worlds—the comfort of Italian craftsmanship and the spirit of Bali’s vibrant produce. The tomatoes are sun-kissed and naturally sweet, the basil grows just meters from our kitchen, and the burrata is made locally using fresh cow milk from Java. When guests take their first bite, I want them to taste both Italy and Bali—travel through flavor.”
Tradition, Innovation, and the Gentle Art of Surprise
Life N Style Magazine:
How do you balance classical technique with modern innovation?
Chef Natalino Ambra: “Innovation isn’t about shocking people. It’s about surprising them gently. I always begin with memory—something rooted in my past. Classical techniques give structure; creativity gives wings. The goal is to let tradition breathe, so something timeless feels new again.”
Cooking with Emotion, Memory, and Nature
Chef Natalino describes his culinary style as authentic, emotional, and evolving—shaped not only by professional kitchens but by life beyond them. At home, he returns to simplicity: spaghetti aglio e olio, rustic risottos, slow-roasted meats. Meals that trade precision for warmth.
Nature also plays a vital role. Morning market walks, the rhythm of the ocean, Bali’s colors and textures—all subtly influence his plates. His day often ends with reflection: quiet moments by the sea, a glass of wine, or bread dipped in olive oil—a ritual passed down from his grandfather.
Authenticity, Seasonality, and Sustainable Kitchens
Life N Style Magazine:
How do authenticity and seasonality guide your kitchen operations?
Chef Natalino Ambra: “They are my compass. Each morning begins with ingredients—not recipes. What the sea offers, what farmers deliver, what the garden gives that day. Authenticity means honoring ingredients with restraint. When something is in season, it already tastes perfect. My role is simply to let it shine.”
Life N Style Magazine:
How do you integrate sustainability into your kitchen?
Chef Natalino Ambra: “Sustainability begins with mindfulness. We work closely with local farmers and suppliers, reduce imports, and ensure every peel, stem, or shell has purpose—from stocks to compost. Waste is simply a story left unfinished.”
Mentorship, Legacy, and Defining True Success
Mentorship remains central to Chef Natalino’s philosophy. Influenced by masters like Alain Ducasse and inspired by artisans who honor integrity over trends, he believes leadership is about passing knowledge forward.
“My grandmother was my greatest mentor. She taught me that cooking is an act of love.”
Life N Style Magazine:
How do you define success in today’s competitive culinary world?
Chef Natalino Ambra: “Success isn’t measured by stars. It’s in the quiet satisfaction of a guest who feels understood through food—or a young cook mastering something they once feared. Consistency with soul—that’s success.”
The Future of Dining at The Oberoi Beach Resort, Bali
Looking ahead, Chef Natalino envisions The Oberoi Beach Resort, Bali as a culinary destination rooted in authenticity and emotion.
“I want guests to remember not just the flavor, but the feeling. Legacy is not what you achieve—it’s what you inspire.”
